quick question:
Is the control file for class REMOVE_DOCS released in grml-live v0.0.8?
I found the class in /usr/share/grml-live/buildd/grml-live_autobuild_grml-small_sid.sh

Yes, see /etc/grml/fai/config/scripts/GRMLBASE/98-clean-chroot for the implementation.
Tip: use 'dpkg -L grml-live | xargs grep $KEYWORD' to search for such stuff. Yes, the documentation for the classes is still on my todolist (as mentioned on http://grml.org/grml-live/).
