Using dd you just write the ISO to disk, this will override any existing data of course but isn't really a matter of the filesystem.
That's true. How will it boot then (say from ext2/3 partition)?
This has nothing to do with a *filesystem*! The dd command (dd if=grml.iso of=/dev/sdX) overrides the partition table as well so you'll really boot an ISO filesystem. :)
